I love a good sloppy joe and these Tex Mex sloppy joes are a fun change in flavors.

This is made with simple, inexpensive ingredients and best of all, it takes less than 30 minutes to whip up the filling.

The buns are my Paleo Hamburger buns and they are the bomb.  They take no time to whip up and, no need to toot my own horn but the great Boy George even made them!

Tex-Mex Sloppy Joes

Prep Time: 4 minutes
Cook Time: 15 minutes
Total Time: 19 minutes

Ingredients

  • 2 Tablespoons coconut oil
  • 1 lb ground beef
  • 1 small onion peeled and diced
  • 2 garlic cloves peeled and minced
  • 15 oz can tomato sauce
  • 4 oz can chopped green chilies
  • 1 Teaspooon chili powder
  • 1/2 Teaspoon ground cumin
  • 1 Teaspon sea salt
  • 1/4 Teaspoon ground black pepper
  • 2 Tablespoons honey

Instructions

In a large skillet add the coconut oil and melt over medium high heat. Add in the onion and garlic and cook until browned, roughly 5 minutes.

Add in the ground beef and cook for 6 to 8 minutes or until the beef is no longer pink, breaking up the beef into crumbles.

Stir in the rest of the ingredients and bring to a boil. Lower the heat and simmer uncovered for 10 minutes.

Remove from the stove and place on lettuce leaves or bread of choice.
