Now and then I like to have a paleo dessert and these are my go-to for a rich, chocolaty cake-like coconut flour brownies. Dare I say that these are the best coconut flour brownies, ever?

This recipe came about when I wanted to make something extra special for Mr. Bejelly for Valentine’s. We’re a strange pair and rarely give each other gifts on holidays but pepper them throughout the year.   Coconut Flour is a tricky beast so after fussing about in the kitchen and creating many disasters, that did get eaten, by the way, I hit the head on the nail in this paleo dessert recipe.

There is something about pairing coffee (or my favorite dirty chai) with chocolate that just brings out its deep rich undertones. It’s an important ingredient so don’t skip it. You can get creative if you like and switch out the applesauce with something fun like puréed apricots or cherries if you wanted to spice things up.

Rich and fudgy brownies are a great way to make this chocolate brownies recipe that is gluten free and delicious.

Is it hard to make brownies with coconut flour?

Shockingly, these coconut flour brownies aren’t hard at all. I love using my coconut flour at home to make up this brownie recipe because it provides brownies that are thick in texture easy to add to the baking dish.

I’ve tried this recipe a lot and I can assure you that you’re not going to want to wait to try these delicious coconut flour brownies.

You can add in some extra cocoa powder and a splash of coconut milk to add an even richer taste to this simple brownie recipe. I promise you that these brownies are some of the best gluten free brownies that you’re ever going to try. (I’m picky about my coconut flour brownies so take my word for it!)

Ingredients needed to make coconut flour brownies with coconut oil

Just gather up the simple list of ingredients needed for these easy brownies with coconut flour recipe.

  • 2 Tablespoon Brewed Coffee
  • 3 Tablespoons Cacao powder
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut oil, melted
  • 1/3 cup honey
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup applesauce
  • 1/2 cup coconut flour, sifted
  • 3 large eggs
  • 1/2 cup dark chocolate chips

How to Make Coconut Flour Brownies with Chocolate Chips

The biggest thing to keep in mind when making these simple coconut flour brownies is this is one of the easiest coconut flour recipes, ever. Don’t forget that making them dairy free is awesome, too! Anything dairy free and gluten free is something that I love. (not to mention, sugar free!)

First, in a large bowl whisk together the coffee and cacao until you get a paste.

Adding in the other ingredients

Next add in the vanilla, melted butter, honey, applesauce, and eggs and beat.

Slowly start mixing in the coconut flour, baking soda, and baking powder

Then add in the chocolate chips and pour the batter into a greased 8″x 8″ pan.

You can also add to a pan with parchment paper, too. Totally up to you.

Pop in the oven

Bake at 350 degrees for 25 – 30 minutes. (add to the instructions preheat the oven to 350 degrees first!)

Can you use semi sweet chocolate chips?

You can. I used dark chocolate chips because I was looking for less sugar without having to go completely sugar free. I also like the flavor better of dark chocolate but feel free to change it up.

You can use whatever type of chocolate chip that you want. Once in the bowl, combine and mix and disperse evenly among the flour, cocoa powder, and other needed ingredients. They add a rich chocolate flavor that really enhances the brownies. I love how it makes them more rich and fudgy.

What else can you add for sweetness to these coconut flour brownies?

If you find that you want more sweetness or a different sweet taste for the best coconut flour brownies, add in some maple syrup or even a bit more coconut milk or even coconut sugar as well. As long as you’re fine with the ingredients that you’re adding to these coconut flour brownies, you should be able to alter the taste as you see fit.

You can also add in some cocoa powder as well if you want more of that chocolate flavor. The cocoa powder goes a long way so be aware.

Should the brownie batter be lumpy?

It really shouldn’t. Once you add in the chocolate chips, you’ll notice lumps but before that, you’re batter should be smooth because of the flour and coconut oil.

If there are lumps in the brownie recipe, you just need to continue to stir until your coconut flour brownies mixture is clear of any and all lumps.

What are some good toppings to add to these coconut flour brownies?

The best part of these coconut flour brownies is that you can add on any toppings that you want. I love my coconut flour brownies topped with a sprinkling of coconut sugar, heavy whipping cream with an added bit of coconut flavoring, and even some extra chocolate chips that I’ve melted and drizzled on top.

Maple syrup is also a great sweetener for this type of dessert. You’ll find that coconut flour and coconut oil brownies are a great way to create delicious grain free brownies.

But if you want to try this recipe with almond flour, you can easily do that, too. A lot of people switch out coconut flour with almond flour because they don’t mind the texture of flavor. I tend to prefer the texture of coconut flour over almond flour and I like the sweetness factor more, too.

Why are my brownies sticking to the pan?

Parchment paper might just be your best friend in this recipe! If you’re noticing that your brownies are sticking to the pan, line your pan with parchment paper and make certain to let the brownies cool completely to room temperature before trying to remove. You can also use refined coconut oil as a way to grease the pan or even use almond flour instead of coconut oil.

The melted coconut oil is a great way to keep these brownies from sticking to the pan. I also like to use coconut oil on the pan as opposed to using coconut flour or any other type of flour because it’s just a smoother texture and taste. Plus it adds some extra coconut flavor, too!

Now that you know how simple it can be to make grain free coconut flour brownies, there’s no reason to wait! Just gather up whatever you need to make these brownies, and you’re going to be eating one of my favorite coconut flour recipes in no time at all!

My biggest tip to pass along is to let these brownies come to room temperature to enjoy. They just add so much extra coconut flavor and taste to these brownies that I think you’re going to love! Once you try these brownies made with coconut flour and oil, you’ll never want to make any other brownies ever again.

And if you’re looking for a way to switch flour instead of the coconut, don’t forget that this recipe can easily be made using coconut flour OR a different flour as well. I like this recipe because it’s sugar free and an easy way to get that coconut flavoring without having brownies that are loaded down with sugars.

    • IF you were baking alot with it, it can be pretty expensive. You don’t really use very much because it sucks in moisture like crazy. For this reason, recipes will often have a lot of eggs or some other filler to make it work. If you can’t find it in the natural section of your grocery store, you can get it online from Amazon.

    • Hi Kristina – they are more of a cake like brownie. My husband is not a huge fan of coconut flour so I really work to make it not taste like something made with coconut flour. If you try it let me know how it goes. 🙂

  4. Would this be the same baking procedure if I wanted to make them into cupcakes? My end result will be the paleo german chocolate (cup) cake. I hope so because that’s the only baking pan I’ve got at my sister’s house while I’m on vacation and this is her favorite cake.

  6. I made this brownies today & it was a complete mess! I suspect there is too much liquid & not enough flour, maybe adding almond flour would help.

  7. I made the using one T water and 1/8t cayenne pepper as a sub for coffee since I’m only 11. These brownies were awesome. In my opinion these are better than the cake. But that’s just my opinion.

  8. So these got a lot of praise. I did tweak the recipe but it was an accident. I read the cacao part wrong and used cacao butter instead of powder and then realized I didn’t have powder so had to use cocoa powder. Worked out though. I used kids for taste testers and they all gave thumbs up. It gave the Camry texture I was looking for. I’ll plan better next time and make sure I have the cacao powder.
