Most people, when I tell them that I don’t eat grains and follow a Paleo diet, wonder what the heck I’m eating.   I thought it would be nifty to share my paleo meal planning  for the week.  One, this will prevent me from eating out – which I’ve done too much since I’ve been dealing with a cold and two, perhaps give some helpful inspiration to others.

I use the left over chicken meat ( so I don’t cook it as long as the recipe suggests) from Monday to make

  • 2 tbsp sunflower oil (I use coconut oil)
  • 4 -5 cloves garlic (crushed)
  • 1 1/2 lbs of chicken breasts cut into cubes
  • 1 tbsp Ground Roasted Coriander
  • 1/2 tsp ground turmeric
  • 1/2 – 1 tsp chili powder
  • 1 tsp salt or to taste
  • 1 1/2 tbsp lime juice
  • 2 tbsp finely chopped fresh coriander leaves
  1. Heat the oil in a large frying pan over gentle heat. Add the garlic and fry until it’s lightly browned. Add the chicken, increase the heat to medium-high and fry for 8-10 minutes, stirring frequently.
  2. Add the ground roasted coriander, turmeric, chili powder and salt. Continue cooking for 3-4 minutes, stirring continuously. Stir in the lime juice and coriander leaves, then remove from the heat.

Salmon cakes with asparagus

Chili Verde with oven roasted carrots.  After I roast the tomatillos and whiz them up, I just throw everything in the crock pot.

Crock pot Pork with Sauerkraut and Apples.

Combine 1 jar of Bubbies sauerkraut, 4 pork chops and 1 diced apple in the crockpot and cook for 8 – 10 hours.

  1. The menu sounds really awesome. I’d love to see your posts each week. I’d probably start a few weeks behind you if you did that just because I’m fairly stocked up with other goods right now.

  2. Hubby and I eat this way too gal! I had no idea that you were eating this way. We only ate out the other night for the first time in almost a year! I had to do the Olive Garden and I was bad, but those are our “rewards” and we try to stick to the good foods that I don’t make in our place. Thanks for so many good ideas because I had no yet planned for the week. I’ve been sick with a cold and bad fibromyalgia. We always have something for backup in the freezer for when I’m down so we don’t get off track!

    • I figure that if I’m plan 90% of the time then I’m doing fine. Very cool that we follow the same diet. I’m sure that you’ve seen some great health benefits from eating this way.

  3. that sounds great. I’m good for dinner, but breakfast is my hard meal. The boys want pancakes or GF muffins. They hate eggs. I never know what to feed them. What do you do for breakfast.

    Ps we like Bubbies too!

    • I usually do eggs and bacon. I used to love soaked oatmeal when I ate grains. You could use GF oats. No eggs is pretty hard. I would probably do lots of smoothies for breakfast.
