Paleo Double Chocolate Chip Cookies

 

Ok, I know the absolute last thing I should be eating right now is sweets but, after the week I had,  chocolate was necessary.    Who knew  how stressful selling a house could be.  I sure didn’t.    Now, I can see why I gained a pound this week versus had a loss.   Anyhow, I needed a cookie that spoke chocolate chocolateness and this Paleo Double Chocolate Chip Cookie does it.  It’s super simple too.

Prep Time: 8 minutes
Cook Time: 28 minutes
Total Time: 36 minutes

Ingredients

Instructions

  1. Combine the almond butter, egg, maple syrup, cacao , coffee, salt and baking soda in a small bowl and mix until well combined.
  2. Fold in the chocolate chips and drop by spoonful on a greased baking sheet
  3. Bake at 350 degrees for 25 - 29 minutes.
  4. Remove from the oven and let cool on a rack before serving.
  5. Enjoy!

    One word: YUM! These will definitely be on the treat list after I’m done with the Whole30! Maybe I’ll make them for the hubs on Valentines Day 🙂

    Has the house finally sold? If so, congrats! You’ve been one busy momma!

      No not yet, lol 🙂 Lots of interest though and we had a showing yesterday that seems promising. These cookies are SOO Good! I ate at least 6, no lie. My husband had to hide them from me.

      • Hahaha!! I’ll probably need to be careful how many of these I make at one time! (My mind is telling me no, but my body’s telling me 100!!)

        Well hopefully the right person will come along soon and get this house off your hands!

    Could you sub almond flour or maybe coconut butter for half of the almond butter? I don’t have quite that much in the house at the moment…
