Paleo strawberry cream popsicle

The Hood Strawberries are finally in season and I’m stocking up.  I’ll more than likely end up buying 10 flats and freezing them to eat throughout the summer.  Well, I hope they last that long.  If you’re lucky enough to have tried a Hood strawberry you know they are crazy sweet.  I liken them to Mother’s Nature’s candy bar.

They also make the perfect sweet treat and now that it’s starting to heat up, I wanted something cold to help me stay cool.  I also wanted to make something simple that didn’t require an ice cream machine (which I still have not bought) so it was Popsicle time.

PALEO STRAWBERRY POPSICLE RECIPE
Yield: 6

Strawberry Cream Popsicles

Prep Time: 15 minutes
Cook Time: 4 hours
Total Time: 4 hours 15 minutes

Ingredients

  • 1 1/2 cups of coconut shreds
  • 3 cups of boiling water
  • 1/2 teaspoon ground cinnamon power
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon of cardamon
  • 1/4 teaspoon sea salt
  • 3 cups of strawberries

Instructions

  1. In your blender or food processor add your coconut shreds, vanilla, cinnamon, cardamon, sea salt and boiling water.
  2. Blend for 3 minutes.
  3. Strain your milk through a nut milk bag.
  4. Rinse out your blender and the coconut milk you just created and the 3 cups of strawberries.
  5. Blend for 1 minute and pour into your popsicle tray. Freeze for 3 hours and then enjoy!

  1. How much vanilla do you use? About a teaspoon? Its not on the ingredient list. Also, what is a nut seed bag? Can I just use a fine sieve?

    • Whoops! 1/2 tsp of vanilla. A fine sieve may not get out all the coconut. I actually use a gallon paint strainer bag that you can get from Home Depot to strain out my coconut. It’s $2 for 2 bags and I just wash then really well and rinse them with vinegar before the first use.

  3. These look delicious! Is it possible to substitute coconut almond milk, rather than make my own? How much milk would that be?

    • Yes, you can substitute coconut almond milk in the Strawberry Cream Popsicles recipe. Use the same amount as the recipe calls for, which is 3 cups of milk. The coconut almond milk will add a delightful flavor to the popsicles. Enjoy making and savoring these delicious treats!
