Four years ago when I went Paleo, I shed some big unhappy tears when I waved goodbye to crispy chicken.

You know what I’m talking about, chicken that has that satisfying crunch sound after you take your first bite.  I threw myself head first into making roasted chicken, grilled chicken, boiled chicken and the like. Yet, I was still haunted by memories of my family gathered around the table, joking about my plight of understanding the foreign language called algebra and eating crispy chicken.

Enter the recipe for Baked Crispy Chicken Drumsticks from NatureRaised Farms®.

I don’t have to tell you food that is raised right, tastes better so I had to give their chicken a try.

Ingredients

Instructions

  1. Preheat oven to 375°F.  Coat your baking sheet with the bacon grease or coconut oil.

  2. Place flour, sea salt and black pepper in large resealable plastic bag. Blend eggs and water in small shallow dish.

  3. Place the crushed sweet potato chips in a separate shallow dish.

  4. Add drumsticks to flour in bag; shake to coat evenly. One at a time, dip drumsticks in egg mixture; coat evenly with potato chips and place on baking sheet.

  5. Bake 30 to 35 minutes or until chicken is done (internal temp 180°F).

The recipe did not disappoint and best of all, I can have crispy chicken again!

    • Hoenstly, I switch between the Terra brand and Good Health Natural food’s sweet potato chips. I’m sure that TJ has a version too. You can make them yourself too by slicing them thin and frying them in coconut oil. Happy Eating!

  2. Found some sweet potato chips this past weekend (just sweet potatoes, sunflower oil and sea salt) and went to make this recipe, only to find someone has eaten all my sweet potato chips! LOL

    Thanks for posting the chicken source too! I’ve been buying pastured chicken from my local farmers, but I am having a heck of a time cooking the dark meat without it being tough (like eating a rubber tire!). It’s frustrating to buy meat only to have it turn out inedible. 🙁 Do you know if Nature Raised farms uses organic feed? I’ve really made every effort to use purely pastured chicken, but so tired of trying to figure out how to cook it! If anyone has any ideas, please share!

    • Oh no. I know the trick with pasture chicken is slow and low so cooking it in the crockpot is a great way to save time and get moist meat. The chicken would have to be branded Organic to be sure that they are using organic feed.
