My son eats his weight in sweet potato chips every week. At first, I would peel the sweet potatoes and then hand slice them into thin disks and finally quarter them. I refuse to use a mandolin because I’m so klutzy I would end up taking off a finger. Anyhow, this daily task was a labor of love and it just sucked up a good hour out of my day until I got smarter.
What you’ll need: Cuisinart Prep 9™ 9-Cup Food Processor | 1 medium sweet potato | 1 cup of lard or coconut oil | sea salt to taste
First, wash and rub dry the sweet potato. I do NOT peel the sweet potatoes for the chips.
The Prep 9 does comes with a wide mouth feed tube so you can easily slice whole fruits and veggies but my son likes his sweet potato chips smaller. I cut the sweet potatoes into strips and pushed them through the smaller feed hole in the feed tube. It took less than 5 minutes for me to do this. No joke. That’s 30 minutes of time I saved and can put towards other cooking endeavors. Also this food processor is so quiet! I was so used to the sound of my last food processor (a.k.a The eardrum breaker) that this machine sounds like a whisper in comparison.
Heat your cooking oil to 350 degrees and then drop your sweet potato chips in small batches into the hot oil and cook for 3 – 5 minutes or until you get very faint brown spots on your chips. Remove from the oil and place on a paper towel to drain the oil. Sprinkle on salt while hot. Repeat.
