You would think that because my father was born and raised in Louisiana, I would have some sort of history with creole food, but I don’t. My mother was, and still is, the cook, so the day I catch my dad in the kitchen whipping something up from scratch is the day that I see a unicorn in my backyard.
My food history is filled with the starchy goodness of lumpia and pancit. I still have dreams about Cha siu bao and that soft sweet bite before you get a taste of the hard boiled egg hidden inside.
It wasn’t until I went Paleo and my taste buds started screaming for something different that I tried Creole food. My first recipe was a paella recipe on MDA and it was like seeing my dad’s food story through a new set of eyes. However, I was tight on time this week and decided to try a simpler paleo creole recipe for Shrimp & Sausage Creole Stew from Satisfying Eats.
I found that it was perfectly seasoned without adding salt or creole seasoning. I also tempered the heat so that The Little could eat as much as his belly could hold.
Side note – Can you recommend a good frozen shrimp brand you’ve found? The shrimp was the only drawback of the recipe. I absolutely can not deal with any kind of old shoe taste when it comes to seafood and the brand I bought was disappointing.
For the side, I made Roasted Cauliflower using Magnolia’s Day’s recipe. This is the only way Mr. Bejelly will eat cauliflower. It’s simple, tasty and a dish that ends up on our menu several times a month.
