Have a bunch of leftover cranberry sauce? Whip up this super simple, yet tasty cranberry smoothie for a healthy treat.

The New Year is nigh and I’m thinking about how to force myself to work out and what recipes to make with the leftover cranberry sauce from Christmas.  

I was really getting back into T Tapp and then in a freak accident my son ended up head butting me in the throat and thyroid area.  I’ve been recovering from that and working out sounded like hell.  Pure hell and I have been tempted like crazy to make my favorite lemon drop shot but I was strong and said no to two of them, lol.

When I was a kid, I never “exercised,” I played and that’s what I’m going to work on this year.  Learning to turn exercise into play so it isn’t a chore that I have to force myself to do.

 I had some inklings of trying crossfit but my husband gave me the LOOK.  I did find this 30 Day Body Weight Challenge (it’s free) I’m GOING to join, so I’ll share how it worked for me in February.

With the leftover cranberry sauce, I  wanted to do something stupid easy and fun.

Hence, this simple cranberry smoothie recipe. I used canned coconut milk, but honestly, I can’t stand the taste of full fat coconut milk in a drink.  

I refuse to buy light coconut milk, so I always  end of pouring the full fat coconut milk into a quart ball glass  jar and adding one can of water and mixing it.

 I did this with the cranberry smoothie and even Mr. Bejelly’s coconut hating self liked it.

Ingedients in this Cranberry Smoothie

  • light coconut milk
  • banana
  • cranberry sauce

The little tore this up! No joke, the kid has transformed into a smoothie drinking monster.

The best thing about this recipe is that it’s sweet and sour and the same time.  If you want more sweet, add some maple syrup or honey, but we loved it as is.

  2. Kelly, this sounds wonderful! Do you ever put ice cubes in your blender to make it more shake-like? I drink smoothies most mornings with fresh or frozen fruit, almond or coconut milk and a scoop of protein powder. I LOVE cranberries so this is a must-try! Thanks for all you do for those of us who are “going Paleo”!!
