This easy Garlic AIP Mayo recipe that is creamy and delicious! It’s perfect on a lettuce wrapped sandwich or for dip for fries.

As my work on creating the book slowly comes to a finish, I am considering tackling the Autoimmune Protocol.  

I still have a host of small annoyances  that I know have to do with my diet and, I’m just getting tired of dealing with them.  

When making drastic changes in my diet I tend to feel, well, trapped; like the world is closing in on me.

However, my eyes have been opened to the amazing recipes you can eat on the Autoimmune Protocol from the book  The Autoimmune Paleo Cookbook by my friend Mickey from Autoimmune Paleo.

It is jam-packed with information and includes a fantastic meal plan, shopping list and gorgeous, easy to make recipes.   I love mayo and was amazed and when I saw this vegan garlic mayo recipe in her book.

Now, a lot of people think that you need eggs to make mayo.

We all know that eggs are a no no on the AIP diet.

So, Mickey was genius enough to realize that you can use a food processor or immersion blender with some coconut butter, olive oil, garlic cloves and make a delicious aip mayo.

What’s in this AIP Mayo Recipe?

This recipe is made with 4 simple ingredients:

Coconut Butter

Extra Virgin Olive Oil

Water

3 to 4 cloves garlic

How to make this mayo recipe

  1. Place all the ingredients in a blender and blend on high for a minute of two, until thick sauce forms (when freshly made, it should resemble the consistency of conventional mayonnaise).
  2. If the sauce is too thick, think with water until the desired consistency is reached.

Can I substitute avocado oil for extra virgin olive oil?

Yes, avocado oil is a great, light oil you can use in this recipe

Is this recipe egg free?

yes, this recipe is 100% egg-free

Do I need to use apple cider vinegar for this AIP Mayo Recipe?

No, you don’t. Traditional mayo needs apple cider vineager to imulsefy the eggs. Because this recipe is egg free, you do not need this ingredients

Can I use coconut oil or palm shortening instead of Coconut butter?

No, you will want to use coconut butter as it give this the perfect texture.

Ways to use this Garlic AIP Mayo

You can use this mayo to make a homemade chicken salad or tuna salad. Simple add pre-cooked chicken, diced celery and onions in a bowl and add this AIP Mayo and mix well.

You can use this mayo as a base for a simple salad dressing. Mix it together in a jar with vinegar and avocado oil with garlic powder and sea salt. Whisk until combied and store in the fridge.

  6. I’ve ordered your book from Amazon and it’s been on back order forever it seems. I’ve started the AIP on my own because my pain levels and stomach problems are so bad right now. I’ve got celiac disease. So far, so good. My stomach is calming down some. Really looking forward to your book so I can dig into it.

In reading the ingredients, I noticed that the first one is Coconut Concentrate and it says PAGE 45…I am thinking that this is from the book but I don’t have the book so I’m not sure what is required as this ingredient. Could you please clarify as I’d really like to try this recipe. Thanks so much!
