Summer is here and I have only so many days to eat as much ice cream as possible.  Please tell me I’m not the only one who binges on the sweet, creamy stuff every time the temperature hits 70 degrees (that’s hot as Africa in Portland).

It had to be kismet that I got a copy of Kelly, of the Spunky Coconut‘s, new book Dairy-Free Ice Cream.  Inside are 75 delicious recipes for sweet treats and just a few gems that caught my eye are the Fried Banana Ice Cream, Salted Caramel Ice Cream, Rocky Road Ice Cream, Brownie Batter Ice Cream, Chocolate Whoopie Pie Cakes, and Honey Marshmallow Fluff.

If you’ve got a sweet tooth, this book needs to be in your cookbook library now.  Thank the Universe you can’t gain weight from just looking at delicious sweets because I would have had to break out my stretchy pants after drooling all over this book for a solid day. One thing I noticed about this recipe is that it falls into a Whole30 Dessert recipe. Ok, now, you’re probably thinking “What desserts can I have on Whole30?” Now, Whole30 guidelines are pretty strict about not eating dessert. I personally would prefer to eat a real food dessert than break down and eat a box of krispy kremes. Ok, enough about that!

How to Make  Paleo Strawberry Ice Cream Recipe

Put the strawberries and coconut milk in a blender and puree until smooth.

Add the dates, almond, cashew, or hemp milk, lemon juice, vanilla extract.

Puree until smooth.

Freeze for about an hour or refrigerate until cold.

Pour into the ice cream machine and churn per the manufacturer’s instructions.

Eat right away or freeze until hard for pretty scoops.

Instructions

  1. Put the strawberries and coconut milk in a blender and puree until smooth.

  14. Ooooh! This looks very yummy. I just got a ton of strawberries out of my mom’s garden. Now I know what to do with them all. Any ideas, though, on what I can use instead of the dates? Because of a yeast allergy i can’t have any dried fruits.

  19. Sounds interesting. I am new to paleo in a sense. I am gluten intolerant and that lends itself nicely to paleo. I love to bake but it is a bother for GF stuff, soo much of it to put together so I mostly do veggies and protien. TY for recipe.

Since giving up dairy for health reasons six months ago, I have remained dairy free and not even tried to incorporate a dairy free substitute and have avoided any recipe that would remind me of what I was missing and get me back to the two things I love the most, ice cream and cheese. I am at a point now where I think I can start substituting for the things I miss the most and make things dairy free. These recipes sound awesome. I would like to add to my new collection of healthy cookbooks.

  30. This would be great! My son (3 years old) was recently diagnosed with Crohns and it seems dairy is one of his triggers for flare-ups so I have been experimenting with dairy free ice cream. This book would help me a lot. Also, I see in the strawberry ice cream recipe above that there is no refined sugar added and I am always looking for a way to sweeten food with as little sugar as possible. Also, I have to slip veggies into my kids diet and ice cream (believe it or not) is a way to hide greens and other veggies.
