If there is anything that breaks my heart into pieces, it’s the fact that thousands of children are going hungry every single day.
The facts below are startling:
- The USDA reports that 1 in every 6 Americans is food insecure.
- 6 out of 7 low-income kids who eat a free or reduced-price school lunch are missing out on that essential meal during summer.
When you live in a world where we can do amazing things like fly to the moon and heck, see and talk to someone in real time who lives thousands of miles away, there is just no excuse for this.
The Sad Truth is that Hunger Doesn’t Take a Vacation
You know that I am a huge Grocery Outlet fan so when I learned that they sponsor a food drive in July to help these families in need, I had to share.
Now I want to share how you can help when you shop at Grocery Outlet.
- Look for specially-marked food items. These are items that each local food agency has identified as “high-need” items. Purchase these products and then place in the collection bin at the front of the store.
- Pick up a pre-made bag that is filled with an assortment of the groceries that have been identified as needed.
- Tell your cashier you want to make a cash donation at the register. Donations will go directly to that store’s local food agency partner. Donate $1, $5, or round up your change.
- Pickup information at a Grocery Outlet store about hunger, food insecurity and local/national resources for people in need.
- Join the events at your local store to support the Independence from Hunger® food drive.
I’ve shared before that growing up my family had a lot of love but we didn’t have a lot of money. I was a kid who got free lunch but my parents always had food on the table. One of my favorite treats my mom used to make us was peanut butter cookies. I didn’t realize until much later how it was also a treat than anyone on any budget could afford to make.
- 1 cup peanut butter, Make sure this is peanuts only
- 1/3 cup evaporated cane juice
- 1 large egg
- 1 teaspoon pure vanilla extract
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Place all the ingredients in a medium bowl and mix with a spoon until combined.
- Take a large spoon and scoop up some dough. Roll it into a 2" ball.
- Place the cookie ball on the baking sheet and repeat until all the dough is gone.
- With a fork press into the top of the cookie to make a pattern.
- Place in the oven and bake for 10 to 15 minutes
