I LOVE Mexican food and it’s just painful to say that I can not eat corn. We’ve added back rice into our diet but whenever we eat corn, it’s just not pretty. That didn’t stop me from recreating this Skillet Tamale Pie and the crust turned out perfect. It also whips up pretty quickly and in one pan so there isn’t a ton of dishes to clean up later too (which I am in love with).
