One of my favorite comfort foods is chicken pot pie. When I was creating this recipe, I really wanted a creamy filling paired with a flaky (yes, flaky crust) and mama, not to toot my own horn, I did it.
My first, second, third, fourth and fifth bites were absolute heaven. I also had memories long forgotten flood my mind about my childhood. My mother worked nights when I was young and my father’s answer to getting dinner on the table came in the form of store bought frozen chicken pot pie and tv dinners.
I seriously had forgotten about this but the crust woke up these old memories and I could not get over how much it reminded me of those pies. I’ve got more recipes in mind for this crust (cherry pie hand pies). This recipe is filled with yummy chicken, vegetables and it’s dairy-free to boot!
