As a mom, I know that one of best things I can do is feed my children healthy foods.  Sometimes healthy can be at odds with taste but I never have that problem with one of Jennifer’s recipes.  Jennifer is a genius in the kitchen and her newest cookbook “The Paleo Kids Cookbook” is fun, delicious and kid approved.

You and your kids can have fun making recipes they’ll love that are grain-, dairy- and gluten-free, such as:

-French Toast Sticks
-Pale-O’s Cereal
-Chicken Nuggets
-Pizza Pockets
-Animal Crackers
-Sweet Potato Bacon Tots
-Soft Pretzels

Yield: 6 servings

Grain + Nut Free Granola fromThe Paleo Kids Cookbook

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients

  • cup sunflower seeds, 140 g
  • ½ cup toasted pumpkin seeds, 59 g
  • ¼ cup flax seeds, 42 g
  • ½ cup unsweetened flaked coconut, 85 g
  • ½ cup unsweetened shredded coconut, 93 g
  • 2 tbsp coconut flour, 12 g
  • 2 tbsp sweet potato flour, 14 g
  • ¼ cup local honey, 60 ml
  • 2 tbsp sunflower seed butter, 17 g
  • ½ cup dairy- and soy-free chocolate chips, 112 g

Instructions

  1. Preheat the oven to 350˚F (175˚C) and line a large baking sheet with parchment paper.
  2. Combine all the ingredients in a mixing bowl and then spread them out on the baking sheet.
  3. Bake for 10 minutes, then redistribute the contents and bake for another 5 to 10 minutes, being careful not to burn.
  4. Remove the baking sheet from the oven. Allow the granola to cool, then store in an air-tight container at room temperature.

  1. There are recipes for both Nachos and a cheese sauce! This book may have been written with kids in mind but I’m looking at it for adults.

  2. So many paleo recipe books have recipes I would not eat even before I was gluten free, I appreciate that this one has more recipes with less exotic ends.

    I think the pretzel recipe sounds delicious.

  3. I’ve never used cassava and sweet potato flours and it seems as though the recipes in this book use them. I’m excited to try them and see how they compare to the usual flours. And cheese 😉

  4. This book is intentionally written to help bring families together and get kids excited about food and cooking (while letting them enjoy nourishing foods)! Also, I am really excited that there is a chicken nugget recipe because everyone needs some of those in their life!

  5. Oh I’m so excited about this giveaway! I’ve been eyeing this book so I can make some Paleo-friendly treats for my toddler! I read through all the reviews… nothing lower than 3 stars for this gem!
    The Legit Bread recipe is in this book, and I think that will help immensely with toddler-friendly fare!

  7. I’ve been following Jennifer’s journey with this book for quite awhile, so I actually had to look pretty hard to find something I learned. So I’m going to go with nothing having known that Jennifer has three kids. I actually thought she had two. Ha! I’ve loved reading about the cereal recipes and the treats, like pretzels and cakes, which are so hard to make paleo. Plus, my hubs is addicted to tots and I can’t eat them, so I’m psyched to try the recipes here!

  8. I have this book on my amazon wishlist. I love that it is geared towards kids, I cannot wait to try and make the pizza pockets since my kids are huge pizza fans
