My family and I are serious snackers. If I told you how much money we spend on snacks each month, well, I would have to kill you (just kidding). I grew up eating peanut butter popcorn and I recently had a fierce craving, but I have an on again and off again relationship with peanuts.

Ok, who am I kidding? I should NOT eat peanuts because I break out in a rash every single time I eat them.

I have been searching for a good substitute for peanut butter and after I discovered SunButter , I knew that I had finally found the perfect partner to the jelly in my sandwiches and solution to my popcorn craving.

You might be asking yourself, what’s SunButter? It’s a nut-free butter made from roasted U.S.-grown sunflower seeds. It’s packed with more vitamins and micronutrients like magnesium, vitamin E, zinc, and iron than traditional nut butters like peanut butter and almond butter.  It also contains less saturated fat and has 7 grams of protein per serving.

SunButter is made in a dedicated peanut-free and tree nut-free facility and is free of all the top 8 food allergens, including soy, milk, eggs, wheat and crustacean shellfish. It’s also vegan, gluten-free and no-GMO and you can find it in your traditional grocery store. Beginning July 20, folks in select cities around Oregon, Washington, and Montana, as well as those in Salt Lake City and Anchorage, will be able to find SunButter at their local buying club.

Ok, now that you know amazing SunButter is, you might wonder how it tastes.

If you’ve been following me for a while, you know that my house if full of picky eaters. It’s amazing that I was able to transition my family to a gluten-free diet/Paleo diet.  I also have particular taste buds, and I really love the taste of this butter.

It works perfectly as a substitution for other nut butters in recipes so if you have had a hankering for cookies, but have nut issues, you can have cookies again!

Now on to this recipe for SunButter popcorn.  Make extra because everyone is going to ask for seconds.

SunButter Popcorn
Yield: 6 people

SunButter Popcorn

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 2 Tablespoons butter
  • 3/4 cup honey
  • 1/2 cup SunButter
  • 1/4 Teaspoon vanilla extract
  • 5 cups popcorn, already popped

Instructions

  1. In a medium sauce pan over medium high heat add the butter and melt. 
  2. Add in the honey and bring to a boil, mix with a wooden spoon or spatula for 1 minute.
  3. Add in the SunButter and vanilla extract and mix until combined. Pour over your popcorn.
  4. With two wooden spoons, mix until well coated and serve. You can store this in a container and leave on your counter for up to 3 days.

  1. To be honest, I like the taste of Sunbutter better than I do any nut butters! And on top of popcorn, wow. I’m trying hard not to eat corn but I have a feeling I’ll be making this for my kids and maaaybe sneaking a handful (or five) 🙂
