She has been also kind enough to let me share one of the tasty recipes from her book.  This recipe for Coconut Banana Cookies is simply delicious and so easy to make.  I know that you’ll love it as much as I did.

Coconut Banana Cookies + Low FODMAP Menus for IBS Cookbook

Recipe from Low FODMAP Menus for IBS

Ingredients

  • 1/4 cup coconut flour
  • 1/2 cup oil
  • 2 Tablespoons sugar
  • 1 ripe banana
  • 2 eggs
  • 1 teaspoon ground cinnamon power
  • 1 teaspoon pure vanilla extract
  • pinch of sea salt
  • 1/2 teaspoon baking soda
  • 1 cup coconut

Instructions

  1. Heat the oven to 350 degrees.
  2. Mix the dry ingredients, oil, banana, sugar in a food processor.
  3. Add the eggs and vanilla and mix.
  4. Remove the mixture from the food processor to a bowl and add the coconut.
  5. Place a sheet of baking paper on an oven tray.
  6. Drop bog spoonfuls of dough onto the paper and shape them into circles.
  7. Bake about 10 minutes until they are golden but still soft.
  8. Remove from the oven and leave to cool on the tray for half and hour so they firm up a little.

  4. This book would be wonderful to have. My son is 3 and has been diagnosed with Crohns. We are opting to control it through diet and supplements instead of steroids and immune suppressors. I fear what those would do to his tiny, growing body. This book would give more ideas on what to cook for him. I scour the internet as much as I can looking for recipes to try to see if he will eat something good for him. He is a picky eater to top it off so getting good veggies in him is hard. This book would help me in so many ways!

  5. I thought the ratio of 1/4 cup flour to 1/2 cup oil was odd. Even though I added more flour, the cookies were soggy with oil. Will not be making this recipe again.
