These crispy roasted Paleo Sweet Potatoe fries are perfect dipped with ketchup! For an extra kick, they are topped with lime and cilantro.

Thanksgiving is 3 days away and I’m stressed.  We’re hosting this year and I’m thinking about how much time it takes to get everything on the table at the same time and make sure it’s HOT.  

There is nothing worse than lukewarm gravy on tepid ginger mashed sweet potatoes matched with HOT turkey.

 Anyhow, enough caps.  I jumped in the van and headed over to Safeway to grab some magazines for ideas on easy, fun recipes to make for the holidays.

When was the last time you saw coupons for a magazine?  Right now, in select stores and while supplies last, you can find coupons for $1.00 off each issue of Real Simple, Sunset Magazine and Cooking Light.  The coupons are on a tear pad located near the magazines.

I found an awesome recipe in Real Simple for Crispy Roasted Paleo Sweet Potatoes Fries and gathered up the ingredients as well as grabbed the newest edition of Sunset Magazine.

What I love about this recipe is that it’s so simple.  That article that shared the recipe contained 10 ideas for holiday sides and nine of them were Paleo!

The recipe was amazing and even better, I saved $1.00 off the issue of Real Simple which essentially made the sweet potatoes we ate for dinner free.

Baked Sweet Potato Fries
Yield: 6

Paleo Sweet Potato Fries

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

This crispy, oven-baked Paleo Sweet Potato fries are the perfect side dish.

Ingredients

  • 4 sweet potatoes
  • 2 Tablespoons olive oil
  • 1/2 teaspoon lime zest
  • 3 Tablespoons of lime juice
  • Sea salt and black pepper to taste.

Instructions

  1. Cut the sweet potatoes into thin wedges.
  2. Coat with the olive oil and the lime zest.
  3. Season with the salt and pepper.
  4. Roast on 2 rimmed backing sheets at 425 degrees, tossing once, until golden brown for roughly 15 - 18 minutes.
  5. Drizzle with the lime juice and the chopped cilantro leaves.

    This looks soooo good! I love baked sweet potatoes, but I never tried them with lime and cilantro before. This takes something I already love to a WHOLE NEW LEVEL!

    These look great, but I’m wondering why there are two separate quantities of lime juice? The instructions don’t call for two additions…
