I am a creature always in search of the easy button when it comes to cooking up food in the kitchen.  Yes, in my past I was considered a convenience food junkie. All of my food come in packages or cans and it was a lot of work retraining myself to cook up food from scratch.  However, one of the foods I missed the most was hot chocolate .  There is just something about sitting on the sofa watching my favorite TV shows and drinking a  hot cup of hot chocolate.  It was time to dig deep and come up with a Paleo hot chocolate mix so I could do this in an instant rather than a good 10 minutes. Yes, I am that lazy sometimes

This trick was to find a milk powder and lucky for me Wilderness Natural’s makes a coconut milk powder.  This would make a wonderful homemade gift!

Paleo Hot Cocoa Mix

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients

  • 1/4 cup coconut sugar
  • 1 cup of cocoa powder
  • 1/2 cup coconut milk powder

Instructions

  1. In a coffee grinder place the coconut and grind until you have a fine powder.
  2. Pour this into a bowl with the coconut milk powder and the cocoa powder and mix with a spoon until well blended.
  3. Store in a glass jar.
  4. To make 1 cup of Hot Cocoa add 2 tablespoons of the mix to 1 cup of water.

  1. Do you think this would work without the milk powder? In other words, just the Cocoa powder and coconut sugar in the mix, and then when you go to make a cup, you could use warm almond milk or coconut milk instead of water?

  2. Oh my!! Thank you for this recipe!! My hunny, who doesn’t drink coffee but loves a yummy mug of cocoa was recently diagnosed with several food allergies, all milk, dairy, etc being one of them! I never knew such a thing as coconut milk powder existed. I will definitely be looking for this and trying this out!
