My favorite Girl Scout cookie was the Samoa.  I’m pretty sure you can’t go wrong when you combine chocolate, coconut and caramel.

When I saw the  recipe for paleo samoa brownies in the Paleo Parent’s newest cookbook, Real Life Paleo, I jumped at the chance to make it.

The first bite was thick, chocolaty deliciousness and I fought to not eat the whole pan!  Seriously.

This recipe is just one of the few gems in this cookbook and there is so much more helpful information for those who are trying to tackle the Paleo diet.

I loved the practical tips for real-life solutions to replacing allergens in recipes.  I also loved how they created a baby steps plan into the diet where you transition on your own schedule (which will hopefully result in you not sliding back into a SAD lifestyle).  

There are over 175 recipes in here and I can’t wait to dig into their Mongolian Beef and their Epic Bacon Meatloaf recipes!

This book is a winner and I highly recommend you buy it today!

Yield: 12 to 15 brownies

Paleo Samosa Brownies

Ingredients

For the Brownies

  • 1/2 cup coconut oil, melted, plus more for greasing the dish
  • 1/2 cup B grade maple syrup
  • 2 large eggs
  • 2 1/2 cups Superfine Blanched Almond Flour
  • 1/4 cup cacao powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup chopped macadamia nuts, chopped
  • 1/2 cup chocolate chips

For the Caramel Sauce

  • 1/2 cup B grade maple syrup
  • 1/2 cup honey
  • 1 teaspoon baking soda

For the toasted coconut topping

  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350 Degrees. Grease an 11 x 7 inch baking dish
  2. Make the brownies: In a medium bowl, whisk together the coconut oil and maple syrup. Add the eggs and beat together.
  3. In a separate bowl, mix the flour, cacao powder, baking soda and salt.
  4. Add the dry ingredients to the wet ingredients and mix until a thick batter forms. Fold in the nuts and chocolate chips.
  5. Pour the batter into a prepared dish. Place in the oven and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Meanwhile, make the caramel sauce: heat the maple syrup and honey in a small saucepan over medium heat. Once bubbles begin to form, reduce the heat to medium-low and cook until it thickens and the color darkens, about 10 minutes, stirring occasionally with a whisk to prevent burning.
  7. Watch carefully: the mixture can potentially bubble up and flow over the edges of the pan. If that happens, remove the pan from the heat and stir, returning the pan to the heat once the bubbling subsides.
  8. Once the sauce has thickened, remove the pan from the heat and whisk in the baking soda until thoroughly combined (it will expand and bubble as you whisk).
  9. Return the pan to medium heat for 2 to 3 minutes, whisking constantly, until the mixture becomes a thick, rich, bubbly sauce that does not deflate when moved off the heat. Remove from the heat and let cool for 15 minutes, stirring occasionally to reincorporate any liquid that separates.
  10. Let the caramel sauce and brownies cool for a few minutes.
  11. Make the tasted coconut topping: In a small skillet, toast the coconut flakes over medium heat, stirring frequently, until slightly browned, about 5 minutes. Remove from the pan and set aside.
  12. Pour half of the caramel sauce over the baked brownies and top with the toasted coconut flakes.
  13. Store the leftover caramel sauce in a seal able jar in the fridge for 2 weeks.

    I never liked the Samoa cookies, I was always a thin mint girl but I will definitely be making these brownies as soon as I drag myself out to get maple syrup! Thank you for sharing

    I’m getting a sugar letdown just looking at the photos. Wonder how the brownies would be on their own. Haven’t had brownies in years…..can’t have much chocolate in addition to being paleo. I definitely need easy recipe help.

    One thing about your book – from the page for it, it looks like there’s a chicken and dumpling soup recipe – could that possibly be true??

    I learned that while food is fuel for the body, it’s also attached to memories and important life experiences. Even though we’re paleo, that doesn’t change our sentimental relationship to food.

    I miss those Girl Scout cookies so much and since I’m Celiac, I’ll never get to eat them again. So Wow! Thank you for sharing this recipe. brownies look absolutely amazing!! I am dying to try this recipe and I am thinking that I should probably pick up this book too If this is an indication of what is in there. I’m just sad I can’t eat these Brownies right now!! YUM!
