I am sucker for a good deal and I often find myself in the clearance section of the grocery store stocking up on staples when I can find them.  First, we pretty much only drink water, raw milk/coconut milk, and tea/coffee in our house.  If I’m feeling like branching out I will have kombucha but I can not remember the last time we had juice.

So when I saw pomegranate juice on clearance for one dollar, I have no idea why I put it in my cart and took it home.  The stuff is crazy sweet out of the jar.  I was thinking of maybe using it in a pudding recipe or  popsicle but instead wondered what would happen if I froze it into pomegranate ice cubes and used it as a splash of flavor and color in sparkling water or in a lemon drop shot.

A couple of things:

  1. The ice cubes are very soft – even when you leave them in the freezer for days (these were in 2 days before I took photos).
  2. They melt crazy quick.

Prep Time: 5 minutes
Cook Time: 8 hours
Total Time: 8 hours 5 minutes

Ingredients

  • oz One 8 jar of pomegranate juice

Instructions

  1. Pour the juice into your ice cubes and freeze over night.
  2. Place one to two ice cubes in a glass and cover with sparkling water.
