Ingredients

  • 3 cups water
  • 2 cups of broth
  • 1 lb dry black-eyed peas
  • ½ lb bacon cut into small pieces
  • 1 medium onion diced
  • 2 stalks of celery diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Rinse dried peas thoroughly, sorting any tiny pebbles or other debris.
  2. Press the Saute button on your Instant pot and add in the bacon, diced onion, and diced celery and cook for 3 minutes or until the bacon is lightly browned.
  3. Place the rest of the ingredients in the instant pot bowl and stir with a wooden spoon for 10 seconds.
  4. Close the lid and make sure it's latched. Turn the valve to "seal" and set the Instant Pot to cook on high-pressure cook mode for 30 minutes.
  5. Let it do a natural release for 10-15 minutes.
  6. Open the lid and remove the ham hock and set it aside.  With a fork, fluff up peas and serve.
