Ingredients

  • 1 tablespoon of Coconut oil
  • 1 small onion peeled and diced
  • 2 cloves garlic minced
  • 1 lb boneless skinless chicken breasts, diced
  • 1 cup of frozen peas and carrots
  • 1 cup diced pineapple
  • 3 cups of cooked rice
  • 1 1/2 teaspoons sea salt divided
  • 1 teaspoon ground black pepper divided
  • 4 tablespoons of coconut aminos or gluten-free tamari

Instructions

  1. In a large skillet over medium, melt the coconut oil and add the onions and garlic. Saute for 3 to 4 minutes until the onions are translucent.
  2. Take the cut chicken and sprinke with 1/2 teaspooon of sea salt and 1/2 teaspoon of black pepper.
  3. Place the chicken the skillet and cook for 6 to 7 minutes until the chicken is no longer pink.
  4. Add in the frozen peas and carrots and cook for 2 to 3 minutes.
  5. Then add in the pineapple and rice and with a two spoons, lightly toss the rice to combine.
  6. Sprinke the rest of the salt and pepper over the rice and add in the tamair.
  7. Toss again to combine and cook for 5 to 7 minutes.
  8. Remove from the stove and serve immediately.
