Everything but the Bun Cheeseburger Casserole

Casseroles can be a parent’s best friend. This recipe utilizes all the classic cheeseburger
toppings in one easy dish. Kids will love it because it tastes like the perfect bite of a cheeseburger, and parents will love it because it has a short prep
time, leaving more time to relax with the family. Feel free to add your family’s favorites, such as bacon or jalapeños or even top with shredded lettuce for a little crunch!

Ingredients

  • 1 lb 454 g ground beef
  • 1/4 cup 40 g chopped white onion
  • 1/4 tsp garlic powder
  • 2 large eggs
  • 1 14.5-oz [411-g] can diced tomatoes, drained
  • 4 oz 113 g softened cream cheese
  • 1 cup 112 g shredded mild cheddar cheese, divided
  • 1/4 cup 35 g chopped dill pickles 1/4 tsp sesame seeds

Instructions

  1. 1. Preheat the oven to 375°F (190°C) and spray an 8 x 8–inch (20 x 20–cm) baking dish with nonstick cooking spray.
  2. 2. In a skillet over medium heat, brown the ground beef until it is fully cooked and no pink remains, about 7 to 10 minutes.
  3. 3. Carefully drain the grease from the pan and return the pan to the heat. Add the onions and garlic powder. Cook for 3 to 5 minutes, until the onions begin to soften.
  4. 4. Place the meat mixture in a large bowl and allow it to cool for 5 minutes. Crack the eggs into the bowl, add the diced tomatoes and stir into the meat mixture. Fold in the cream cheese and 1⁄2 cup (56 g) of the cheddar cheese.
  5. 5. Spoon the casserole into the baking dish. Top the casserole with the remaining 1⁄2 cup (56 g) of cheddar and place it into the oven. Bake for 20 to 25 minutes, or until the top is golden brown and the casserole is bubbling. Allow it to cool for 10 minutes
    before serving.
  6. 6. To serve, sprinkle the pickles and sesame seeds onto the casserole. Enjoy it with your favorite sauce,
    like BBQ (page 169), or try a tangy Burger Sauce (page 181).
