Casseroles are the perfect easy meal that everyone will love. This cheeseburger casserole is the perfect keto casserole for your kiddos and no one will miss the bun!

I’m going to admit that my favorite food is hamburgers. Seriously, I could eat a cheeseburger every. single. day.
I remember the first time I went without a bun, it was weird. I wanted that bready goodness with each bite but my heath came first. I realized I need to take my power back from the piece of bread and went full lettuce wrap.
Now, I’m an adult so it was lot easier to make a rational decision about all the whys I should not have bread.
Try getting a kid to skip bread, nonetheless go full keto is often quite a bit harder.

What you’ll need for this recipe
- ground beef
- chopped white onion
- garlic powder
- eggs
- diced tomatoes, drained
- softened cream cheese
- shredded mild cheddar cheese, divided
- dill pickles
- sesame seeds
How to make Everything but the Bun Cheeseburger Casserole
Preheat the oven to 375°F (190°C) and spray an 8 x 8–inch (20 x 20–cm) baking dish with nonstick cooking spray.
In a skillet over medium heat, brown the ground beef until it is fully cooked and no pink remains, about 7 to 10 minutes.
Carefully drain the grease from the pan and return the pan to the heat. Add the onions and garlic powder. Cook for 3 to 5 minutes, until the onions begin to soften.
Place the meat mixture in a large bowl and allow it to cool for 5 minutes. Crack the eggs into the bowl, add the diced tomatoes and stir into the meat mixture. Fold in the cream cheese and 1⁄2 cup (56 g) of the cheddar cheese.
Spoon the casserole into the baking dish. Top the casserole with the remaining 1⁄2 cup (56 g) of cheddar and place it into the oven. Bake for 20 to 25 minutes, or until the top is golden brown and the casserole is bubbling. Allow it to cool for 10 minutes before serving.
To serve, sprinkle the pickles and sesame seeds onto the casserole. Enjoy it with your favorite sauce.

Everything but the Bun Cheeseburger Casserole

time, leaving more time to relax with the family. Feel free to add your family’s favorites, such as bacon or jalapeños or even top with shredded lettuce for a little crunch!
Ingredients
- 1 lb (454 g) ground beef
- 1⁄4 cup (40 g) chopped white onion
- 1⁄4 tsp garlic powder
- 2 large eggs
- 1 (14.5-oz [411-g]) can diced tomatoes, drained
- 4 oz (113 g) softened cream cheese
- 1 cup (112 g) shredded mild cheddar cheese, divided
