First, Happy Father’s Day! This is Mr. Bejelly’s first Father’s Day so I’m planning on spoiling him with lots of bacon for breakfast, chili verde for lunch and 2 hours of uninterrupted gaming time on his xbox 360.

Finally,  Summer has decided to grace us here in the Pacific Northwest and I don’t want to spend a lot of time in the kitchen. This week’s recipe roundup focuses on quick and easy paleo dinners so I can spend the maximum amount of time soaking up the sunshine and remembering why I choose to live in the eternally soggy land known as Portland.

      I removed all grains except for sourdough for a few weeks because I felt terrible and the sourdough was enough to give my body the carbs I was used to. You body essentially goes from using carbs as fuel to using fat. It wasn’t hard because I was suffering from pre-diabetes, anxiety and depression. These cleared up immediately after I went on the diet so it was worth it to me to be strict on it.

        So … no grains at all? Hmmmmm…. gonna have to think about this. I know it would be good for me (PCOS) but just not sure about the committment to changing over.
