Paleo Sugar Cookies

It is not a holiday without paleo sugar cookies.  I used to eat my weight every single year so you know I was doing a happy dance and forgetting about calories and carbs when I came up with this sugar cookie beauty.

I decided to do everything in my food processor so I wouldn’t have to hand mix the dough. Seriously, this is the easiest way to do it.

Ingredients

Instructions

  1. Do not preheat your oven. Timing is based on putting into a cold oven.
  2. Grind the cashews into a flour in your food processor.
  3. Next add in the coconut flour, sea salt, baking soda and tapioca flour and pulse to combine.
  4. Then add the ghee vanilla, egg and honey and pulse until you have a cookie dough.
  5. Roll out the dough between two sheets of parchment and cut with your cookie cutters. Place them on a piece of parchment paper and then bake at 350 degrees for 15 – 20 minutes.
  6. Enjoy!

Paleo Hamburger Buns recipe

When I was a kid, my mother would often make us the special treat of peanut butter sandwiches on white hamburger buns.  Oh mama, I can still remember the sticky sweet taste and, of course, washing it down with a large glass of ice cold milk.  Now, it makes sense my mother would turn us loose in the backyard for hours after feeding us the equivalent of sugar in a straw.

Anyhow, we know the best part of any burger is the bun.  This bun recipe is the perfect texture and taste.  It’s not sweet but I guess you could add a little honey if you’re so inclined.  My son snatched one from the counter and happily chanted “bread, Little eat bread” before it quickly disappeared.

  1. Set out your nonstick hamburger pan. If your nonstick has ever been washed in a dishwasher it has lost it's ability to stick properly so grease the pan with coconut oil, lard or sustainably raised palm shortening.
  2. Place your cashews in your blender or food processor and grind into a flour.
  3. Then add in the rest of the ingredients.
  4. Blend completely until you have a batter.
  5. Pour the batter into your nonstick hamburger bun pan and bake at 350 degrees for 25 - 30 minutes.
  6. Remove from the oven and let cool.
  7. You can slice the buns in half if you would like.

Chocolate Covered Cake Doughnut Recipe

First, I’m just going to put this out there.  If you don’t try this chocolate covered cake doughnut recipe then you are missing out.  These doughnuts are perfectly sweet and the texture is exactly like the cake donuts I used to wolf down by the dozen during my grain-eating days.

I had been thinking of  creating a doughnut recipe for some time but honestly, I was stuck on what pan to buy.   Seriously, stuff like that can trip me up for months.  Anyhow, a  month ago, I was wandering around Marshall’s and found this Wilson Doughnut Pan for $7 and figured, what the heck, I would just buy it and see what happened.

Well magical doughnuts happened, people.   They are moist, cakey and baked to perfection in the pan and yes, I know it’s a nonstick pan but wow is all I can say.    I definitely can say that this Chocolate Covered Cake Doughnut Recipe is in my top 10 favorite recipes created to date.

Gluten Free Paleo Donut Recipe

Chocolate Covered Cake Doughnut Recipe -Paleo, Gluten-Free

Course: Gluten Free Donut Recipe

Ingredients

Cake Doughnut

Chocolate Sauce

  • 1 3 oz Dark Chocolate Candy Bar
  • 1 tablespoon Coconut oil

Instructions

  1. In your blender or food processor, grind the cashews into a flour.
  2. Add the cashew flour and dry ingredients and mix well.
  3. Then add in the applesauce, coconut oil, maple syrup, egg and water and blend until the batter is smooth.
  4. Grease your mini doughnut pan with the palm shortening.
  5. Pour the batter into your mini doughnut pan and turn on your oven to 350 degrees and bake for 23 minutes. Remove from oven and let cool for 10 minutes.
  6. In a sauce pan add the candy bar and coconut oil and melt. Mix with a spoon to combine and then take each doughnut and coat one side in the melted chocolate and let cool on a rack.
