As my work on creating the book slowly comes to a finish, I am considering tackling the Autoimmune Protocol.

I still have a host of small annoyances  that I know have to do with my diet and, I’m just getting tired of dealing with them.

When making drastic changes in my diet I tend to feel, well, trapped; like the world is closing in on me.

However, my eyes have been opened to the amazing recipes you can eat on the Autoimmune Protocol from the book  The Autoimmune Paleo Cookbook by my friend Mickey from Autoimmune Paleo.

The Autoimmune paleo book cover

The book is a must have for anyone thinking of  trying the Autoimmune protocol.

Buy it! You won’t be disappointed!

Now, a lot of people think that you need eggs to make mayo.

      1. If using coconut butter, does the mayo have a strong coconut flavor? If so, would you say the coconut/garlic combo is tasty?

  6. I’ve ordered your book from Amazon and it’s been on back order forever it seems. I’ve started the AIP on my own because my pain levels and stomach problems are so bad right now. I’ve got celiac disease. So far, so good. My stomach is calming down some. Really looking forward to your book so I can dig into it.

  7. In reading the ingredients, I noticed that the first one is Coconut Concentrate and it says PAGE 45…I am thinking that this is from the book but I don’t have the book so I’m not sure what is required as this ingredient. Could you please clarify as I’d really like to try this recipe. Thanks so much!

  8. I have also been thinking of trying this diet and this would make it so much easier! I would love to try this recipe, but I don’t have the instructions for the coconut concentrate without the book.

  19. I cannot wait to try this mayo recipe. I so miss making my own, since I love it and stopped using canola years ago. Thanks for the contest!

  20. Hi!
I just made this exactly as described but mine came out quite thin/liquidy. Would you recommend just less water or also less oil too?

    1. Hi AJ! If it came out too thin, you can try reducing the water slightly or blending for a bit longer to help it emulsify. Adding the oil slowly while blending can also help create a thicker mayo. Let me know how it goes!
