For the longest time, I’ve loved how artichokes tased, but I never know how to make them! I always waited to be invited over at my friends’ house or for my mom to make them, but never once did I try cooking them on my own.
One day, though, I was craving them really bad. That was when I decided to read a bunch of artichokes instant pot recipes and developed my own version, and the artichokes turned out absolutely great!

Instant Pot Artichokes: Your Go-To Recipe!
I can’t even begin to explain how addicted I got to this recipe, especially when I was on a diet! Since I was obviously always craving food, instant pot artichokes became my ultimate go-to; they’re light and very fulfilling at the same time. So, if you’re on a diet, a healthy eater in general, or looking for a vegan recipe, you’ll want to save this recipe. Let’s get into it!

1. Prepare Artichokes
The first thing you want to do is to remove the dry outer leaves of the artichokes. Then, cut the artichoke stem off and leave just around 1/4 inch. To finalize your prep, use a sharp knife to cut the top 1-2 inches of the artichoke (or kitchen shears). Apply the same method to the number of artichokes you’re using.
Also, if you have an electric pressure cooker, you can still use it to prepare your artichokes.
2. Wash the Artichokes
When you’re done perfecting the artichokes, proceed to rinse them and then dry them using a paper or kitchen towel. Following that, I rub some lemon on the cut surface to make sure there’s no room for browning.
3. Prepare the Pot
Now, you can start preparing the instant pot by adding water to it and placing the trivet inside. Once you’re done, put the artichokes in the instant pot with the cut side down. Close the lid once the artichokes are in place in the instant pot, and set the steam release knob to the “sealed” position.
Tip: Some instant pot artichokes recipes add aromatics to the water, like garlic, bay leaves, lemon wedges, salt, onion, and a sprig of rosemary. If that method sounds appealing to you, go for it! Not only does it create a beautiful smell, but the artichokes also absorb the flavors.
4. It’s Time to Cook the Artichokes!
Once you press the pressure cook or the manual button, you’ll need to choose the cooking time based on the size of your artichokes, as follows:
- Small artichokes: 7-minute cook time
- Medium artichokes: 10-minute cook time
- Large artichokes: 15-minute cook time
Once the pressure cooking cycle is over, perform a “quick release” of the steam. You do so by turning the steam release knob to its “venting” position or by pushing the release valve if there’s one on your instant button. Open the lid, and you’ll know your artichoke is ready when your knife slides into the bottom seamlessly.
How Do You Steam an Artichoke in an Instant Pot?
It’s a piece of cake! All you need to do is add water to your stainless steel instant pot and place a trivet inside. Then, you want to cut the artichokes side down and set them inside the instant pot. Finally, you just close the lid and hit the pressure cook or manual button to set the time based on the size of your artichoke.
How Do You Eat Steamed Artichokes?
If it’s your first time trying out steamed artichokes, you’re in for a treat! This is a game-changer meal, for real. Once your artichoke is cooked, pull off one of its petals and scrape off the artichoke (the meat) using your teeth. That’s basically how it’s done –– don’t try to eat the petals, though; they’re not edible.
Also, I love eating pressure cooker artichokes with a dipping sauce! So, experiment with your favorite dipping sauce and see if you’ll like your artichoke bites with it. A lot of my friends eat their artichokes plain as an appetizer, while I prefer them with sauce alongside other side dishes. It’s your call!
Some of my favorite dipping sauces for instant pot artichokes include lemon mayonnaise (made by mixing mayonnaise and lemon juice), plain mayonnaise, melted butter, garlic butter (sauteed, pressed garlic cloves in butter), and the list goes on. Try them out; you’ll get addicted!

That’s all on how to make instant pot artichokes! No wonder there are tons of recipes for it online. It’s because they’re enjoyable to eat, and the fact that they can easily be dipped in a sauce makes them all the better, at least for me!
My only advice to you would be never to try to cook globe artichokes on a stovetop; they take forever. Using an instant pot makes the process a breeze! If you don’t have one, here’s the one I use; give it a shot!
Also, as a tip, try to get artichokes of the same size when you’re shopping for them. As you saw, the artichokes’ size makes a difference in cooking time, so it’s best to be consistent so that they could all be ready in your pressure cooker at the same time. The same applies to leaves’ density; some artichokes have loose leaves while others have tightly-packed ones.

- 4 Artichokes
- 1 1/2 cups Water
- 1 lemon, juiced
Remove small outer leaves that are dry, and cut the stem off, leaving about 1/4". Then use a really sharp serrated knife to cut the top inch or two off of the artichoke.
Rinse the artichokes and pat dry with a paper towel. Then rub some lemon on the cut surface to prevent browning.
Add the water to the pot. Place the trivet inside.
Place the artichokes into the pot, cut side down.
Close the lid and set the steam release knob to the Sealed position.
Press the Pressure Cook/Manual Button to one of the following cooking times:
Small artichokes - 7 minutes
Medium Artichokes - 10 minutes
Large artichokes - 15 minutes
When the cooking cycle is finished, do a Quick Release of the steam. The artichoke is done when a knife slides into the bottom easily.
