Ingredients

  • 35 oz of fresh unpeeled shrimp.
  • 3 ½ cups water.
  • 1 cup rice.
  • 2 tablespoons olive oil.
  • 1 tablespoon butter.
  • 1 medium to mate chopped.
  • 2 cloves garlic, finely chopped.
  • 2 tablespoons chopped long onion.
  • 1 tablet fish stock.
  • ¼ cup chopped green paprika.
  • ¼ cup of chopped red bell pepper.
  • 1 white onion, chopped.
  • ½ teaspoon ground cumin.
  • ¼ teaspoon ground paprika.
  • 1 tablespoon tomato paste.

  • Salt and pepper.
  • 1 tablespoon chopped fresh parsley.


Step by step instructions

  1. In a small saucepan place the unpeeled shrimp, fish stock tablet, water and cook for about 3 minutes or until the shrimp turn pink.
  2. Transfer the shrimp to a bowl. Peel and save the shells for later use.
  3. Heat the olive oil and butter in a medium saucepan over medium-high heat. Add the onions and cook for 1 minute, add the garlic, green bell pepper, red bell pepper, onions and tomato. Cook for about 10 minutes.
  4. Meanwhile, place shrimp shells and broth in a blender and blend for 2 minutes. Pass through a strainer, discard the shells and save the broth.
  5. Add the rice to the tomato mixture, stirring until well coated. Add the broth, tomato paste, ground cumin, ground paprika, salt and black pepper and bring to a boil. Then reduce heat to low, cover and simmer for 20 minutes.
  6. Add the shrimp, peas, carrots, green beans and cook for 5 to 7 minutes.
  7. Add fresh parsley and serve.
