On Friday Mr. Bejelly and I celebrated our 10th Wedding Anniversary by buying a chicken tractor and getting three hens.  I was ecstatic.  I know. I’m just not the kind of  girl who is big into  the pomp and circumstance that comes with a lot of  life’s celebrations . Wait. The Little’s birthday is an exception and I will be the happy mom rocking a pirate hat when he turns the ripe old age of 3 this summer.

Anyhow,   as we watched our girls cluck inside their chicken tractor I had a hard time wrapping my mind around the fact we have been married for a decade. A decade!   Where did the time go and more importantly, how did we not kill each other when we were learning the rules of laundry and how to load a dishwasher properly.

I’ve been so busy cooking that I seriously needed a break on this momentous day so I broke out my crockpot and put it to work so I could spend time watching the chickens with my family.  It was worth it and six hours later our bellies were filled to the brim with delicious slow cooker shredded pork goodness.

Yield: 6

Slow cooker Shredded Pork

Prep Time: 10 minutes
Cook Time: 6 hours
Total Time: 6 hours 10 minutes

Ingredients

  • 1 large yellow onion, diced
  • 2 lbs pork cutlets
  • 1/4 cup coconut oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup B grade maple syrup
  • 1 tbsp unsweetened cocoa powder substitute Carob or omit if AIP
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Instructions

  1. In your slow cooker, combine all of the ingredients and cook on high for six hours.
  2. When the pork is done, take two forks and shred into bite size pieces.

    Happy Anniversary.

    Had to look up what a chicken tractor was. Is that North-Western States lingo? While I’m not a back woods country girl, I’m also not a city girl, and I’ve never heard of this. We just call them coops down around Austin.
