Mushrooms are one of nature’s little delights and they are without a doubt one of my favorite ingredients to cook with. There are so many different recipes which you can make with mushrooms and on top of that there are hundreds of different mushroom varieties which you can use to add a wide array of flavors and textures to each of recipe. I now grow my own mushrooms with this great little mushroom kit which my daughter bought, and so we have been going pretty heavy on the recipes in recent weeks. If you love mushrooms as much as I do, here are some delicious dishes which you can cook at home.
Garlic Mushrooms
Sometimes it is the simplest flavors coming together that work so well and these garlic mushrooms are the perfect example of that. Garlic compliments mushroom so well, especially if you are able to get some wild garlic, which has a stronger and earthier taste. To make garlic mushrooms I like to first make a garlic butter then slowly roast the mushrooms in the butter until they take on all of that delicious buttery goodness.
Creamy Mushroom Pasta
Pasta is another food which works really well with mushrooms, especially if you are able to get some of the more exotic mushroom varieties. I like to keep it simple with this pasta dish and make a peppery cream sauce, fry up some sliced mushrooms and then gently toss the pasta in the sauce. For the cream you could also added some additional layers to the dish by using creamed cheese.
Mushroom, Garlic and Thyme Quinoa
Garlic and thyme together have this really fragrant and punchy flavor which works well in my view with something like couscous or quinoa. There is a real freshness to this dish and if you are looking for nutrition rich ways to have a light lunch, this is the way to do it. If you have some shiitake mushrooms then they offer a really delicious flavor up against those herbs.
Mushroom Soup
Mushroom soup is a great way of using up a large amount of mushrooms and you can actually make it without much effort at all. Combining some chicken stick with multiple variety of mushrooms, and a touch of salt and pepper is all that is needed to cook up a hearty mushroom broth, the perfect remedy to a cold snap.
Stuffed Chicken Breast
Chicken is so versatile and I love to stuff chicken breasts with ingredients like cheese, vegetables or even spicy cured meats. A recent favorite dish of mine is mushroom stuffed chicken breast and porcini mushrooms lend themselves perfectly to this. Finely chop up your mushrooms and mix them with some sautéed spinach and some creamy cheese like a goat’s cheese. Add the mix to the chicken breast, wrap it in serrano ham and cook for no more than 20 minutes in the oven, a delicious way to enjoy mushrooms, and a meal which will leave everyone with a smile on their face.
