This summer I have been experimenting with adding food back to my diet like white potatoes and rice. So far, it looks like I can eat white potatoes without any issues (i.e. eczema flare ups, digestion issues, etc). Now that Fall has decided to grace us, I’m looking for simple comfort food recipes that are easy to make and require little prep and clean up (like gluten-free mac and cheese)!
I was wandering around my natural grocery store and saw Simply Potatoes in the refrigerated section near the dairy. I grabbed a bag with the intent of recreating one of my favorite gluten-free casseroles.
One of the things that I like about this brand is that the potatoes are fresh and never frozen, it's made with real ingredients and requires no peeling or shredding.
For busy moms, such as myself, there are just times where you need a cheat and this product is a great way save time and energy on those busy days where you can't even think of making everything from scratch. It's also a great way to sneak in some extra nutriton.
You can easily use Simply Potates to whip up breakfast every day of the week, throw them in your slow cooker or make a one-pot meal and even go bananas and have breakfast for dinner!
This Gluten-free Skillet Mexican Hashbrown Casserole recipe made for great leftovers the next two days! You could whip this up the night before and reheat it in the morning for a no fuss meal for guests (since you'll want to spend more time socializing than cooking!)
Gluten-free Skillet Mexican Hash Brown Casserole
- 8 oz full fat cream cheese, at room temperature
- 1 cup salsa
- 1 cup sour cream
- ½ teaspoon of sea salt
- One 20oz bag of Simply Shreds
- 1 cup Sharp Cheddar Cheese + ¼ cup for the top
- Preheat your oven to 350 degrees.
- In your food processor add the cream cheese, salsa, sour cream and sea salt and blend until smooth.
- Next mix in the Simply Shreds and cheddar cheese and mix until well coated.
- Pour this into a greased skillet.
- Top the casserole with the remaining cheddar cheese.
- Place in your oven to bake for 45 minutes.
