One of my favorite things is mayo. Seriously. I could and can eat it by the spoonful. Because I love mayo, I’m always making foods that require it as an ingredient. Mr. Bejelly did not like tuna fish and no matter how much I tried to convince he would like it, it wasn’t he saw Little tear through it like he was in a berry patch (my son loves berries) that he took his first bite. Anyhow, he was making every kind face because I put eggs in my tuna. You would think I had broke some sacred tuna fish law the way he was going on about it.
I soldiered on because I have eaten it this way my entire life (and after he took a bite and kept eating I figured it was all good). This recipe is super easy. I love that it’s fast and filling. For the bread, I cheated and bought a box of Chebe Focaccia mix
- 2 5 oz cans of tuna, drained
- 2 hardboiled eggs, diced
- 1/2 cup mayo
- 1 tbsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 one small red onion, diced
- For the Bread
- 1 box of Chebe Focaccia mix
- In a medium bowl mix add the tuna, mayo, mustard, garlic powder and red onion and blend. Then mix in the diced hard boiled egg.
- Place on your favorite bread or eat out of the bowl
