Every now and then I like to shake things up in the Bejelly household and try out new beverages.
I pretty much focus on healthier drinks like Kombucha, herbal teas and various nut milks, well, every now and then I’ll get Mr. Bejelly some cold brew coffee, but that’s for another post.
I was invited to try out Silk’s new Almond Coconut Blend so I jumped at the change to test it out.
After my first sip, I realized that it was going to do well in our household, primary because it does not taste like coconut. It has a really light flavor that works really well over Paleo cereal or in a smoothie. It’s also unsweetened which I consider a big bonus since I’m really try to get my sugar intake down.
I decided to use it in a super simple dairy-free cherry popsicle recipe. When I say simple, I mean there are only three ingredients and it takes less than 10 minutes to get these babies in your freezer. I made them late at night and I swear the Little asked every 10 minutes if it was time for popsicles. I’m not kidding when I tell you that the first thing he asked me when woke up the next morning was “Can I have Popsicle?”
It was worth the wait because he destroyed two of them for breakfast (yes I gave my son a popsicle for breakfast – don’t judge).

Dairy-free Cherry Popsicles

Prep time: 5 mins
Cook time: 6 hours
Total time: 6 hours 5 mins
1 large ripe banana
1/2 lb fresh or frozen cherries
1 cup of Silk Almond Coconut Blend
Place all the ingredients in your blender and pulse for 1 minute.
Pour the mixture into your Popsicle molds and place in your freezer for 6 hours.
