Paleo Mother's Day Brunch

I remember my first Mother’s Day, well, the main thing that I remember about Mother’s day was a cashier wishing me a Happy Mother’s Day when I had forgotten about the holiday. I know. I know. You must think I live under a rock or something but even though I had the Little strapped to me in my Ergo, I never connected that I got to take part of this day of celebration. But this year is different as I get to host the festivies so, of course, I’m planning a brunch (with lots of bacon). Here is the Mother’s day menu I will be preparing this year.

Paleo Eggs Benedict
Potato-free Breakfast Potatoes
Rosemary’s Bacon
Salmon Salad Stuffed Avocado
Apple, Ginger and Spice Scones W/Vanilla Glaze
Sweet Potato & Bacon Latkes
