Mexican food is one of my all time favorite things to eat. Well, I should say I could put a dent in pile of Nachos like you would not believe before I went Paleo.  It was hard to give up and well, when I have moment of weakness, I do break down and eat a few corn chips.  Sigh. No more of that nonsense so it’s time to start delving into more tasty Paleo diet Mexican food recipes like Cheesy Chile Rellenos  to get my fix.
