Mexican food is one of my all time favorite things to eat. Well, I should say I could put a dent in pile of Nachos like you would not believe before I went Paleo.  It was hard to give up and well, when I have moment of weakness, I do break down and eat a few corn chips.  Sigh. Thanks so much, Kelly, for including my Mexicali Spaghetti Squash and Pork Flameado recipes on your round-up! I've had a crazy year buying a new house in April, a move in August, a fall in which I broke a wrist and had to have TWO surgeries just 6-weeks apart to repair all the damage, and well..............then the holidays. Thanks so much for sharing two of my Mexican dishes with your readers, Kelly! I hope they enjoy these two as much as we do. Both have been quite popular on my blog.. The Pork dish in Flameado sauce one guy has made 4-5 times for guests and he says it's always a hit. :)
