I remember the first Mother’s Day after the Little was born. I had walked up to my local grocery store and after making my purchases, the grocery bagger wished me a Happy Mother’s Day and for a split second I was completely surprised. In my tired fog of new motherhood, I had forgotten that I was now a Mom and I got another holiday to celebrate every year.
What’s a Mother’s day without a Mimosa during brunch? For a long time I wasn’t able to enjoy them because I just can’t tolerate the sweetness of juice.
It wasn’t until I got creative and added coconut water flavored with pineapple, which is fraction of the sweetness of straight juice, that I could enjoy all of the bubbly goodness that I missed.
Lucky for me, I received an early Mother’s Day gift when I got my WOW Alert from Grocery Outlet. Coconut water that was flavored with Pineapple was ON SALE! Sorry, I kinda got a little excited and, of course, jumped in my car and stocked up.
If you don’t know about WOW Alerts yet they are basically an email alert for the bestselling deals from your neighborhood Grocery Outlet. To get on the special list the products must be a smoking deal and be 50% or more off from the original retail price elsewhere. The Zico coconut water that I purchased cost 99 cents each and I know that they retail for over $2 a bottle at my local grocery store.
That’s a deal that makes this frugal mama happy.
Now back to this recipe. You can, of course, increase the amount of coconut water in the mix, but I prefer a drier flavor.

Tropical Mimosa
Ingredients
- 1 cup of Champagne
- 1 cup of Pineapple Flavored Coconut Water
Instructions
- Mix together in a small glass jar and blend with a spoon.
- Pour into glasses and drink!
