My family and I are serious snackers. If I told you how much money we spend on snacks each month, well, I would have to kill you (just kidding). I grew up eating peanut butter popcorn and I recently had a fierce craving, but I have an on again and off again relationship with peanuts.
Ok, who am I kidding? I should NOT eat peanuts because I break out in a rash every single time I eat them.

If you’ve been following me for a while, you know that my house if full of picky eaters. It’s amazing that I was able to transition my family to a gluten-free diet/Paleo diet. I also have particular taste buds, and I really love the taste of this butter.
It works perfectly as a substitution for other nut butters in recipes so if you have had a hankering for cookies, but have nut issues, you can have cookies again!
Now on to this recipe for SunButter popcorn. Make extra because everyone is going to ask for seconds.

SunButter Popcorn
Ingredients
- 2 Tablespoons butter
- 3/4 cup honey
- 1/2 cup SunButter
- 1/4 Teaspoon vanilla extract
- 5 cups popcorn, already popped
Instructions
- In a medium sauce pan over medium high heat add the butter and melt.
- Add in the honey and bring to a boil, mix with a wooden spoon or spatula for 1 minute.
- Add in the SunButter and vanilla extract and mix until combined. Pour over your popcorn.
- With two wooden spoons, mix until well coated and serve. You can store this in a container and leave on your counter for up to 3 days.
