Lunch is often the hardest meal for me to plan. Until recently, I would often just have a breve and “skip it” but that’s not working anymore. It’s taken me almost 2 years to be OK eating salads again (hang on aversion from pregnancy) and mama, the salads I found for this round-up just look amazing. There are more recipe ideas here though since seriously who wants to eat only salad for lunch? Not me. Which is why I have been on the search for the best electric lunchboxes.
Anyhow, I didn’t “get” lunch until I realized that lunch can just be a smaller dinner. Meatballs are my favorite lunch with rolled cold cuts filled with avocado, homemade mayo and cucumbers come in second.

Lunchtime can be so difficult that I usually end up eating a salad every day (not that I don’t love it but I do like variety). With summer on the way, I’ll be home with the kids more and able to make “real” lunches. Thanks for these recipes!
