The first thing I thought when I took my first sip of this drink was that I was drinking hot pudding.
Using full fat coconut milk in this recipe makes this thick, rich and filling as heck. I think I might try this again at the dawn of winter and add whiskey or get into party mode with a lemon drop shot to make it a hipster party.
You can always just use homemade coconut milk or skim the fat from the canned coconut milk (don’t throw the deliciousness away – make frosting with it) to thin it to your taste.
I would not add water to this as it will dilute the coffee chocolate mint deliciousness that this is.
Peppermint Mocha
Ingredients
- One 13.5 can of full fat coconut milk
- 1 cup strong coffee
- 1/2 tsp peppermint oil
- 3 tbsp raw cacao powder
- 3 tbsp maple syrup
Instructions
In a pan over medium high heat bring the coconut milk to a boil.Place this and all the ingredients in a blender and blend for 30 seconds.Enjoy!
